Sour Beer

Sour beer is beer which has an acidic, tart or sour taste. This can be achieved by a tradition method of wild fermentation, where wild yeasts in the air or environment naturally sour the beer. Alternatively a modern method of souring is through kettle souring, where bacteria like the ones found in yoghurt are added to the brew kettle to sour the beer. Often to balance the tart flavours fruit is added.
