Cognac is brandy made from grapes that were grown, fermented and distilled in the AOC of Cognac. The most common of these is Ugni Blanc, which makes a virtually undrinkable white table wine that is then twice distilled in copper pot stills and aged in French oak from Limousin or Tronçais. No sugar or sulphur may be added to this highly acidic wine, which then goes into a Charentais copper still for double distillation to around 70%. A minimum of 2 years oak aging is legally required to qualify
