Description
Dr Beak is based in Martinborough and producers small-batch Gins. They have a focus on environmentalism, I mean to give back while producing premium quality gin. A portion of all profits are gifted to organizations who help protect our precious biodiversity. Dr Beak is created by Lacey, with the help of her husband Tim who is a winemaker for Escarpment vineyards.
It took three years of recipe development to create this audacious Gin. With complex spice and earthy notes, lifted citrus and lavender to brighten the palate which is rounded out by a touch of umami. Each run is bench distilled after the juniper has gone through a 24 hour active maceration. The gin is bottled at 48% to further enhance the taste experience and bring bold flavours to hold it's own with a tonic mixer - but it's so elegantly smooth you wouldn't notice!
