Very high usage of Grand Cru fruit in roughly equal parts Pinot Noir/Chardonnay with extended time ageing on lees in the bottle. The two key elements in the making of superior Champagne; the most critical of all, time spent on lees in the bottle. The longer aging builds body, texture, seductive Champagne tastes and greater finesse in the bubbles. Taittinger Brut NV is aged longer on lees than most heavily promoted supermarket Champagnes yet is comparably priced.
