Description
Pet Nat is all the rage, and we understand if you are rubbing your head, thinking what is it? Basically, it’s a sparkling wine where the secondary fermentation occurs in the bottle, it’s not disgorged, filtered, or fined, leaving all the natural goodness inside and as a result, there is some sediment at the bottle of the bottle. Greystone’s Pet Nat is made from Riesling and Pinot Noir grapes and where after 4 weeks into fermentation, the young wine was chilled to allow a brief settling period before being estate bottled without fining, filtration, or sulphur. The wine then completed the second stage of fermentation in the bottle, capturing the delicate subtle mousse and reaching full dryness over the following six weeks. Falling within the Natural Wine movement but this is a must-try, seriously.
Smells
a heady perfume of freshly baked sourdough, underlined by ripe pears and crisp apples with lifted notes of grapefruit, ginger, spice and a hint of quince.
Tastes
A crisp, fresh, fruity, crunchy wine finishing extra dry, leaving a salivating chalky, leesy, complex aftertaste. There is an added richness and a creamy texture to the mid-palate due to the lees left in the bottle, making for a very tasty drop, that is well worth giving a whirl. A very fine example that is drinking well now, through 2025 and will match well with fresh oysters, cheese, or summer salads.
