Description
Made with a minimum of 8 years aging under flor initially and then without once it is identified as Amontillado, the style combines the best of both worlds between flor and oxidative aging processes. Due to it being slightly more stable than fino styles (including Manzanilla) it can be recorked and stored for a couple of weeks in the fridge.
Smells
A hint of dried fruit up front, with toasted nuts, almond and mahogany.
Tastes
Dry and briny with marmite and briny flavours coming through on the nutty palate. A class act this, with lovely concentration and poise and the perfect match for chicken and pork, including things like Palma ham.
