GOOGLE the winery and see the normal price of this “Prestige” Margaret River Cabernet… you’ll be chuffed! The best Cabernet fruit was handpicked from two outstanding Margaret River vineyards and carefully hand sorted on arrival at the winery to ensure only perfectly ripe and conditioned fruit went onto pressing. The fruit was crushed and destemmed then fermented for 10 days on skins. A portion of approximately 30% was retained for a period of extended maceration on skins followed by a gentle pressing adding plushness and a savoury textural element. The final blend went directly to 100% finest French oak barriques, a judicious 20% new, maturing in barrel for 10 months. This is a beautiful expression of fine Margaret River Cabernet, the delicious balance between winemaking and fruit showcasing why it is one of the world’s leading Cabernet regions.
Smells
Complex, cassis aromas fill the glass, interwoven with blackcurrant leaf, bracken, warm tobacco leaves and toasty vanilla.
Tastes
Blackberry and blackcurrant flavours saturate the taste buds, supported by generous warm notes of dark chocolate, cedar, and spice. Showing classic Cabernet structure... firm, chalky tannins with a salivating acid thread... exuding the class and heritage of the Margaret River. This has concentration, power and pure drinking pleasure that will age 15-20 years. If you cannot wait, decant one now for an hour prior to serving. Perfect with a thick cut of beef.
