Description
Paglione winery named this wine after their grandfather Nicola, born in 1930. "CAPORALE", in Italian, means the chief of the family, the ‘foreman of all farmers’. “Ariopp, Ariopp” is his mantra learned as a teenager, the transliteration of “Hurry up” a phrase uttered by the American soldiers who arrived in Foggia, Puglia at the end of the Second World War. He produced Cacc’e Mmitte even before the DOC recognition, "cacc'e" (meaning "to expel") and "mmitte" ("to fill") is a reference to the quick turnaround of tanks containing freshly pressed grape must in the rare farms which owned a wine press (and allowed neighbours to use it in quick succession, ‘Hurry up’) during the harvest season.
Smells
a clean, delicate, and fruity bouquet with aromas of raspberry, plum, and blackberry and with a spicy spiral on the finish.
Tastes
Dark berry fruits initially morph into red cherry, sour plum, and kirsch notes, moderately fruity within a powerful framework. In true Italian form, the pronounced tannins/acid combination resonates throughout, supporting the dense core of fruit. Made for pizza, pasta, or red meats, offering great drinking now through 2026+.
