Description
The origins of this appellation’s name are somewhat mysterious, possibly derived from an old term for "poiriers" (pear trees). Located in the “Les Porêts” quarter, south of the village, the terroir produces wines with a rustic style, much like those from the famed “Les Saint-Georges.” In 1855, Dr. Lavalle recognized this area as one of the finest in Nuits. The Faiveley family's deep connection to these vines runs back to the 1830s, when they were the first vines ever purchased by the Domaine.
The winemaking process carefully balances de-stemmed grapes and whole clusters, adjusted according to the vintage. After 19 days of skin contact, the free-run wine is gravity-fed, and the remaining skins are gently pressed to capture a pure press wine. The wine is then aged for 16 months in French oak barrels, with 40-50% new oak and 60% one year old barrels, adding depth and character to this historically rich and rustic wine.
