Description
“Les Saint-Georges” is one of the most historic vineyards in Burgundy, dating back to the year 1000, and is regarded as the finest Cru in Nuits-Saint-Georges. As the smallest producer in the appellation, Faiveley Domaine has been working for the past 10 years towards reclassification as a Grand Cru. The winemaking process varies with each vintage, balancing de-stemmed grapes and whole clusters. The wine undergoes daily punch-downs to extract optimal colour, tannins, and aromas during the 19-day vatting period. Once alcoholic fermentation is complete, the free-run wine is drawn off by gravity, while the grape skins are gently pressed for a pure press wine. The wine is then aged for 16 months in French oak barrels, with 40-50% new oak and 50-60% one-year-old barrels, creating a complex and beautifully crafted expression of this legendary vineyard.
