The Thomas family planted the limestone-rich, calcareous clay soils on marginal slopes of the Waipara Valley in 2004… ideal for growing Pinot with beautiful finesse and aromatics. They’re crafting Pinot as fine as great Burgundy. Now the vines are reaching full maturity and are organically managed, it will be both intriguing and exciting to follow the evolution of their Estate Pinot Noir. The growing and winemaking is both simple and traditional. After careful hand picking and sorting each batch of Pinot Noir was allowed to soak on skins at ambient temperatures before going through wild fermentation. They gently hand plunge each vat daily before pressing to French oak barriques after one month maceration. Each barrel goes through a natural malo-lactic fermentation the following Summer, before blending and bottling 16months after harvest.
