This Top Shelf Central Otago Pinot Noir was hand-harvested then hand sorted in the winery before pressing to ensure only the best grapes make the cut. It underwent a wild ferment with a judicious 10% whole bunch and was macerated on skins 18-22 days. Aged 12 months in barrel followed by 9 months in concrete and wooden cuves. It was bottled unfined. A mix of traditional & modern winemaking... this Pinot is made without compromise to the highest quality standards. Enticing aromas of red & black cherry, raspberry, violets, thyme, anise & baking spice.
