Description
Daniel Sorrell is quickly making his mark with an impressive new range that reflects both his talent and dedication to the art of winemaking. From carefully selecting exceptional parcels of land and building strong relationships with growers to hand-picking grapes and meticulously tasting every barrel, Daniel ensures his wines embody a distinct sense of place and character. Sorrell’s philosophy is deeply rooted in honouring traditions, respecting the land, and celebrating the dedication of vineyard work. By embracing indigenous vineyard yeast fermentations, his wines achieve elevated flavour profiles, structured intensity, and a profound connection to their terroir. The fruit for this wine was hand-picked, destemmed, and gravity-fed into open-top fermenters, ensuring gentle handling throughout the process. Fermentation was initiated with yeast native to The Wrekin vineyard, complemented by a mix of gentle hand plunging and pump-overs for balanced extraction. After 18 days on skins, the wine was gently pressed and transferred to French oak barrels, where it aged for 14 months. In the early spring, the wine underwent 100% natural malolactic fermentation, adding depth and softness before blending and bottling—a true testament to Sorrell's pursuit of excellence.
Smells
