Description
Another gorgeous expression of Bendigo Pinot Gris by Alsace trained winemaker Paul Pujol. Spending a full 6 months on lees gives the wine not only texture and richness but a degree of extra longevity. The grapes were hand-picked before being fermented with indigenous wild yeast, adding further complexity. Crafted in an off-dry style, it will reward careful cellaring for 7-8 years from vintage.
Smells
Bewitching wildflowers and honey, with pear, apple, and quince jam, with a complexing savoury undertone giving an alluring interest.
Tastes
Lush, rich, textural, and very mouth-filling, this is a lavish expression of Pinot Gris aided by a level of refinement rarely seen in Pinot Gris. Utterly seamless and complex, the finish goes on and on, with a superb textural element, salivating and ultimately satisfying. Enjoy with Vietnamese rice paper rolls or a selection of ripe, creamy French cheese.
