Description
An alternative, barrel-fermented style of Sauvignon, this Greywacke Wild 2016 is a complex and harmonious wine drinking amazingly at eight years of age. Winemaker Kevin Judd selects riper parcels of Sauvignon fruit and then gently presses the free run juice to barrel for fermentation with wild yeasts. After a year in barrel, the wine is kept on lees in tank for another 5 months before bottling. An incredibly complex and food friendly style of Sauvignon, Greywacke Wild is a great match for Asian style spiced fish.
Smells
A bit of smoke, almond, cape gooseberry, dried herb and green tea, with tropical fruit aromas like papaya and pineapple.
Tastes
Dried herb complexity and loads of soft, sweet fruit, this dry style of Sauvignon shows plenty of character. Enjoy with mussels or white fish dishes.
