Description
An alternative, barrel-fermented style of Sauvignon, Greywacke Wild 2022 is a complex and harmonious wine drinking well now but will be even better at around 5 years old. Winemaker Kevin Judd selects perfectly ripened parcels of Sauvignon fruit and then gently presses the free run juice to barrel for fermentation with wild yeasts. After a year in barrel, the wine is kept on lees in tank for another 5 months before bottling. An incredibly complex and food friendly style of Sauvignon, and this 2022 is sensational, buy as many as the budget will allow. Greywacke Wild is a great match for Asian style spiced fish, or all seafood dishes.
Smells
A bit of smoke, hazelnut, Cape gooseberry, dried herb, and green tea, with nectarines and passionfruit.
Tastes
Crushed thyme flavours with excellent complexity, mouth-watering acidity, with great texture. This is a dry style of Sauvignon showing plenty of character, a dead ringer for White Bordeaux and will only develop more with time in the bottle. With every swirl of the glass, the aromas and flavours intensify with a gorgeous lingering aftertaste of elderflowers, grapefruit, and smoky vanilla notes. Every sip is captivating. Drinking well now through 2028+. The recommended serving temperature is 8-10 degrees.
