In recent years, Pegasus Bay has redefined their Sauvignon/Semillon blend, aligning it with market trends that favour Sauvignon Blanc. Reflecting this shift, Sauvignon Blanc now exclusively features on the front label, even though Semillon remains an integral part of the blend. This subtle evolution underscores the rising demand for New Zealand Sauvignon Blanc while preserving the wine's unique identity. The winemaking process has also seen a bold transformation. By incorporating whole bunches of Sauvignon into the fermenting juice and allowing extended maceration for up to 200 days, Pegasus Bay has achieved a wine with remarkable richness, complexity, and texture. The result is a striking, multilayered wine that captivates on every level, showcasing the innovative spirit of this celebrated winery.

Smells

An alluring complex bouquet with aromas of subtle lemon, passionflower, yellow plums, kiwifruit, and flint.

Tastes

Juicy, sweetly fruited and very structured, with excellent grip and oak texture across the palate, the mouth-watering acid contributing to the long finish. Drink now or cellar for a decade, this will drink beautifully between now and 2030+ (probably much longer under the correct conditions). Serve with your favourite roasted white meats. The recommended serving temperature is 8-10 degrees.
