Gin originated in 17th century Holland as a medicinal spirit called jenever, later adopted by British soldiers as “Dutch courage.” It surged in popularity during England’s 18th-century Gin Craze, leading to social issues and government crackdowns. As distillation methods improved, gin evolved into the refined London Dry style, becoming a cocktail staple — especially in the classic Gin & Tonic. Today, gin is thriving again with craft distilleries worldwide, including standout producers in New Zealand, creating unique botanical blends and modern takes on a timeless spirit.
Exploring the Different Styles of Gin
Gin comes in a variety of styles, each defined by its method of production and the blend of botanicals used. Below are some of the traditional gins styles and flavours.
London Dry Gin is the most well-known style, crisp, aromatic, and juniper-forward. It must be distilled with natural botanicals and no artificial flavours can be added after distillation.
Plymouth Gin, which can only be produced in Plymouth, England, is slightly earthier and softer than London Dry
Old Tom Gin, a sweeter, more rounded style that was popular in the 18th and 19th centuries and is now making a comeback in craft cocktails. Genever, the Dutch predecessor to modern gin, is maltier and richer, often compared to a light whisky.

Modern gin distillers are also pushing boundaries with Contemporary or New Western Gins, where juniper is still present but not dominant.
